Begin the day with one of Mexico’s most beloved breakfasts as Chef Luis Valenzuela brings Chilaquiles Divorciados to the Culinary Stage.
Comforting, colourful and deeply rooted in everyday Mexican cooking, chilaquiles transform crisp tortilla chips into a satisfying dish layered with salsa, crema, queso fresco, onion and a perfectly fried egg. In this “divorced” version, two distinct salsas share the plate while remaining deliciously separate: a rich, smoky guajillo salsa and a vibrant roasted poblano salsa. Together, they create a breakfast that is familiar, generous and full of contrast.
Throughout this seminar, Chef Luis will demonstrate how the same simple foundation can take on entirely different personalities depending on the salsa. Guests will learn how dried guajillo chiles build warmth, depth and gentle sweetness, while roasted poblanos offer an earthy flavour with a fresh green character. Chef Luis will explore roasting, blending, seasoning and balancing each salsa, sharing practical techniques that home cooks can confidently recreate.
Along the way, he will share helpful tips for keeping tortillas crisp, adjusting spice levels and assembling each plate so both salsas retain their colour and character beautifully.
The seminar will also reveal why salsa is so essential to Mexican cuisine. Far more than a finishing touch, it can define a dish, connect its ingredients and turn something wonderfully simple into something memorable. Put simply, the Culinary Stage Series is like being in the audience of a live cooking show, and you get to enjoy the food creations - complete with drink pairings. The series features local and national chefs, producers and beverage professionals to provide attendees the chance to learn their cooking tips and tricks, and enjoy multi-course, drink-paired menus.

Once purchased, tickets are non-refundable. This is a 19+ event, therefore children will not be admitted. Due to liquor licensing, the Whistler Conference Centre cannot allow people under the age of 19 in any part of the building for the duration of the Cornucopia event.
