Our good friends at Viking are returning again in 2008 to offer up a series of deliciously educational tasting demonstrations aptly named the Viking Stage Series. You won’t want to miss these new and improved seminars that will tempt the senses. The Viking Stage will host outstanding guest chefs and authors touching on topics from Indian Inspired bites to Organic delights to insatiable sustainable seafood. This full working kitchen will set up shop in the Grand Foyer of the Conference Centre from Friday Nov. 7th – Sun. Nov. 9th. Get your tickets now before they get eaten up.

The art of eating and living well is intertwined with our ability to hunt and gather. Exercise your evolutionary talents for finding great ingredients and learn some tips to prepare them deliciously with wines of similar quality. At the heart of the movement for local eating is the desire to understand the provenance of our foodstuffs. Whether it is vegetables straight from the farm, line caught fish, or fair-trade-organic olive oil there are some useful techniques to finding and preparing your bounty. Chefs don’t look up a recipe and then go hunt for the ingredients- they just apply some basic techniques to the best ingredients they can find. Chef Anthony Nicalo of Farmstead Wines will share “hunting” tips, cooking techniques and wine pairing ideas.
